VM 834 Current Issues in Food Safety
GMPs
Semester: Spring, Summer
Students will gain an understanding of Good Manufacturing Practices in the food processing sector. Evaluation of equipment and building features that protect the food product from contamination will be addressed. Students will be able to describe how exterior/interior building conditions and equipment design affects food safety risks. Students will gain knowledge of the fundamentals of pest control.
Topics will include:
- Practical application of GMPS
- Flow of raw materials and ingredients through the food processing plant
- Proper air flow for food safety
- Building/equipment design and construction to protect food
- Fundamentals of pest control, elimination of harborage, and opportunistic conditions
- Information on common food environment pests (flies, cockroaches, ants, crawling insects, rodents, and birds)
Course Materials
All materials will be made available in the D2L course. Lectures will be provided by industry professionals. There is no textbook requirement - readings will be assigned from regulatory, industry, and research sources.
